Hopefully most of them will ripen! It started freezing at night, so Mike had to harvest all the tomatoes while I was in Texas. Now we have a bushel of them sitting in a crate on our kitchen table.

My fav thing to do with green tomatoes is to make chutney or mincemeat (vegan, of-course). If you know how to can, both can be preserved that way, so you can do them in big batches. If not, both can also be frozen.
But nothin' beats a big ol' serving of fried green tomatoes. Yum.

I've never tried fried green tomatoes so I think I might give those a go with my few green tomatoes I rescued from outside.
Make a salsa! I've never had a green tomato but we've had tomatillos. Not quite the same I suppose. I'd love to have some fried green tomatoes one day! Sounds awesome!
I'm in the same boat. I'm making fried green tomatoes, some pickled green tomatoes, and one of my favourites - vegan mincemeat for mincemeat pie and tarts at Christmas time.

i guess fry them... but i had 3 green tomatoes that my dad brought me and left them in a bowl for about a week and now they are as red as they could be! so. maybe yours will ripen, or at least some of them.
Make pickled goodies. I usually make relishes with them. I'm currently trying the dilled pickle recipe, using green tomatoes, recently posted by Julie Hasson on Everyday Dish.
