Souped Up Ramen

When I'm feeling super lazy, I love a big bowl of ramen. Koyo organic ramen is the best!!!

If I'm slightly less lazy, I upgrade my ramen with some veggies. Today's lemongrass ginger ramen was made better with roasted squash, ribbons of lacinato kale and even more ginger.

It's slightly more classy than when made with just the packet ingredients. And much more delicious.

I too do the same thing when it comes to need a quick meal when lazy. But I have never had the Koyo ramen with kale. I am going to have to try that.

I've never had that brand of ramen, and I prefer udon noodles, but love to add things in. This weekend's breakfasts (2 from 1 ramen package) started with the rest of the cherry tomatoes on the counter that were soon to be past, sauted with garlic, then a tin of anchovies before adding the water to boil. While the noodles cooked in the broth I scrambled a couple eggs, chopped the egg "patty" and had a hearty breakfast. Didn't even end up using the seasoning packet.

I could really go for some of that right now, I too usually "healthify" prepackaged foods, makes me feel less guilty when I eat them!
