Winter food

Eating a tomato in the winter isn't that big of a deal- people do it all the time.  But eating a homegrown garden heirloom tomato in the during a snowstorm in Minnesota is a pretty special thing. 

Our green garden tomatoes ripened very slowly this year (probably because we did nothing to speed them up and kept them near the window where it's cool).  This pineappple tomato was the last of the big tomatoes to ripen.  We'll enjoy a few more cherry tomatoes (we had a TON), but that's it for the garden tomatoes!  Except, of course, for the ones I canned...

We enjoyed thick slices of this tomato on top of gluten free biscuits with tofu-kale scramble and cheezy gravy for breakfast.

By the way- cheezy gravy is what you get when you combine leftover gravy and leftover mac 'n cheeze sauce.  

Last night I wanted some really good grounding food.  What better than root vegetables?


I roasted a small butternut squash, beets, a turnip, a carrot,  2 portobello mushrooms, an onion, and garlic cloves with a sauce of maple syrup, balsamic vinegar, olive oil, and Bragg's.  By the time the veggies were tender, the sauce was a thick and sticky glaze.  Yum!

On the side I slathered some Dr. Kracker crackers with guacamole.  I could eat this every day.

How amazing that you had a homegrown tomato this time of year! The root veggies look terrific, too. But you're right-- that tomato is really special!

Yes. And even more special that I'm sure it actually *tasted* like something -- unlike those sold in stores this time of year.

We took in a ton of tomatoes from our little patch, and I was certain we'd be making green tomato this and that... but they ripened! Without any help! It was so strange. We had all of these formerly green tomatoes in our Thanksgiving (??) salsa appetizers. Crazy!

you're so lucky to have that lovely tomato! i haven't had tomatoes since, like...september. and they're my absolute favorite, too. i've been trying to eat seasonally though, and i wasn't fortunate enough to have a stock of green 'maters from the garden ;) also, those roasted veggies paired with guacamole on crackers sounds just wonderful. i want some of that. mm.

how romantic, the thought of a tomato like that in front of a storm... and everything else just looks so inviting, too! mmmm guac and cheezy gravy. :o

The root vegetables look really good. And I have some tomatoes ripening in a box that I am still eating but not often. I have been trying to wean myself from summer tomatoes, and it's easy because these never taste as good.
